Ingredients
- 1 large cauliflower
- 3 tbsp extra virgin olive oil
- 1 tsp paprika
- 1 tsp ground cumin
- 0.5 tsp garlic powder
- 1 tsp sea salt
- 0.5 tsp black pepper
- 1 For the Tahini Sauce:
- 0.25 cup tahini
- 2 tbsp fresh lemon juice
- 1 garlic clove, minced
- 3 tbsp water
- 1 tbsp extra virgin olive oil
- 1 For Garnish:
- 2 tbsp toasted pine nuts
- 2 tbsp chopped fresh parsley
- 1 Pinch of smoked paprika
Instructions

Preheat the oven to 220°C (425°F).

Remove the outer leaves from the cauliflower while keeping the stem intact.

Slice the cauliflower into 1-inch thick steaks.

Brush both sides with olive oil.

Season with paprika, cumin, garlic powder, salt, and pepper.

Arrange on a parchment-lined baking tray.

Roast for 20 minutes.

Carefully flip each steak and roast another 15 minutes until golden and tender.

Meanwhile whisk together the tahini, lemon juice, garlic, olive oil, and water until smooth.

Transfer the roasted cauliflower steaks to serving plates.

Drizzle generously with the lemon tahini sauce.
