Ingredients
- 250 g halloumi cheese
- 1 tbsp extra virgin olive oil
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
- 0.25 cup pomegranate seeds
- 1 tbsp fresh lemon juice
- 0.25 tsp black pepper
- 1 tsp sesame seeds (optional)
- 1 Lemon wedges for serving
Instructions

Slice the halloumi into 1 cm thick pieces.

Heat a grill pan over medium-high heat.

Lightly brush both sides of the halloumi with olive oil.

Grill for 2–3 minutes per side until golden grill marks appear.

Arrange the grilled halloumi on a serving platter.

Sprinkle with parsley, mint, and pomegranate seeds.

Drizzle with lemon juice and a little extra virgin olive oil.

Finish with black pepper and sesame seeds if using.
