Ingredients
- 10 Medjool dates, pitted
- 1 cup rolled oats
- 0.5 cup raw almonds
- 0.5 cup walnuts
- 2 tbsp chia seeds
- 2 tbsp unsweetened cocoa powder
- 2 tbsp unsweetened shredded coconut, plus extra for coating
- 1 tbsp ground flaxseed
- 1 tbsp almond butter
- 1 tsp vanilla extract
- 0.25 tsp ground cinnamon
- 1 Pinch of sea salt
Instructions

Add the almonds and walnuts to a food processor and pulse until finely chopped.

Add the rolled oats, chia seeds, cocoa powder, shredded coconut, flaxseed, cinnamon, and sea salt.

Pulse several times until well combined.

Add the Medjool dates, almond butter, and vanilla extract.

Blend until the mixture becomes sticky and holds together when pressed.

If the mixture is too dry, add one or two teaspoons of water.

Scoop about one tablespoon of mixture and roll into a ball.

Roll each ball in additional shredded coconut if desired.

Place on a tray and refrigerate for at least 30 minutes before serving.

Store in an airtight container in the refrigerator for up to one week.
