Ingredients

  • 2 cups whole wheat flour
  • 0.5 cup fine semolina
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.3333333333333333 cup extra virgin olive oil
  • 0.5 cup plain Greek yogurt
  • 2 tbsp milk
  • 1 tsp orange blossom water
  • 1 tsp vanilla extract
  • 1 For the filling:
  • 12 Medjool dates, pitted and finely chopped
  • 0.3333333333333333 cup finely chopped walnuts
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cardamom
  • 1 tsp orange blossom water

Instructions

    Preheat the oven to 350°F (175°C).

    Line a baking tray with parchment paper.

    Combine the whole wheat flour, semolina, baking powder, and salt in a large bowl.

    Mix in the olive oil until the mixture resembles coarse crumbs.

    Add the Greek yogurt, milk, vanilla, and orange blossom water. Mix into a soft dough.

    Cover and let the dough rest for 20 minutes.

    Mix the chopped dates, walnuts, cinnamon, cardamom, and orange blossom water to prepare the filling.

    Divide the dough into small balls.

    Flatten each ball, place a spoonful of filling in the center, then seal and reshape into a ball.

    Press gently into a Ma'amoul mold or decorate with a fork if desired.

    Arrange on the prepared baking tray.

    Bake for 15–18 minutes until lightly golden on the bottom.

    Cool completely before serving.
