Ingredients

  • 0.75 cup short-grain rice
  • 4 cups low-fat milk
  • 2 tbsp honey
  • 1 tbsp maple syrup (optional)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • 2 tbsp chopped pistachios
  • 1 tbsp sliced almonds
  • 1 Fresh mint leaves for garnish

Instructions

    Rinse the rice under cold water.

    In a saucepan, combine the rice and milk.

    Bring to a gentle simmer over medium heat.

    Cook for 30–35 minutes, stirring frequently to prevent sticking.

    Mix the cornstarch with the cold water until smooth.

    Stir the slurry into the pudding.

    Add the honey, vanilla, and cinnamon.

    Cook for another 2–3 minutes until thickened.

    Divide into serving bowls.
