Ingredients

  • 5 sheets whole wheat puff pastry, baked and broken into pieces
  • 4 cups low-fat milk
  • 2 tbsp honey
  • 5 Medjool dates, chopped
  • 0.25 cup raisins
  • 0.25 cup chopped almonds
  • 0.25 cup chopped pistachios
  • 2 tbsp chopped walnuts
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cardamom
  • 1 tbsp unsweetened shredded coconut (optional)

Instructions

    Preheat the oven to 375°F (190°C).

    Bake the puff pastry according to package directions until golden.

    Break the baked pastry into bite-sized pieces and place them in a baking dish.

    Scatter the chopped dates, raisins, almonds, pistachios, and walnuts over the pastry.

    Warm the milk in a saucepan without boiling.

    Stir in the honey, vanilla, cinnamon, and cardamom.

    Pour the warm milk mixture evenly over the pastry.

    Allow the mixture to rest for 10 minutes so the pastry absorbs the liquid.

    Sprinkle with shredded coconut if using.

    Bake for 25–30 minutes until the top is golden and the pudding is set.

    Allow to cool slightly before serving.
