Ingredients
- 2 cups fresh parsley, finely chopped
- 1 ½ cup fresh mint, finely chopped
- 2 medium tomatoes, diced
- 2 green onions, finely sliced
- 1 ¼ cup fine bulgur wheat
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 ½ tsp salt
- 1 ¼ tsp black pepper

Rinse the bulgur and soak it in cold water for 15 minutes.

Drain the bulgur thoroughly.

Finely chop the parsley and mint.

Dice the tomatoes into small cubes.

Slice the green onions.

Combine all vegetables and bulgur in a large bowl.

Whisk together the olive oil, lemon juice, salt and pepper.

Pour the dressing over the salad.
